BUBBLY stepmother and stepdaughter Hazel and Lisa brought plenty of enthusiasm to their instant restaurant on My Kitchen Rules tonight.

But the Queensland "stepsies" struggled to nail the technical elements of their ambitious menu.

They delivered a consistent entrée but their untraditional croquette mixture had judges Colin Fassnidge and Rachel Khoo raising their eyebrows.

"I have two restaurants and in both I make sure I've got croquettes on. One uses a béchamel base and the other uses a potato base,"Fassnidge said.

"Your croquette didn't follow any of those lines.

"Your salmon's sort of over-cooked. I wanted a pool of that aoli. What the dish was crying out for was moisture.

"Overall it was an OK start."

When they came to collect the plates they discovered Lauren hadn't touched her food, but were unaware it was because of a hair in the salad.

After waiting three hours for the main course, their guests

"The meat was very flavoursome… but the pastry was a little bit soggy and it just didn't have that puff," Khoo said.

"I see you had a little bit of a problem with the sauce.

"The fact you made a beef wellington that is technically very hard, well done there."

The women rebounded with their dessert, delivering the zesty flavours promised in their instant restaurant name.

"You didn't disappoint me with the cake. It was flavoursome; it was bright; it was moist," Khoo said.

"However the pistachio ice cream, you would have been better off saying it was a vanilla ice cream with pistachios.

"All in all you stepped up your game and finished on a high."

They managed to beat Carmine and Lauren's score of 51 and secure a spot in the next round of the competition.

Newcastle mates Chris and Cookie will host their instant restaurant tomorrow night.
