WATERMELON AND MOZZARELLA SALAD
½ small watermelon, 1cm thick about 7cm square slices
1 mozzarella ball, sliced
2 tbsp sliced fresh basil
Freshly ground black pepper
Extra-virgin olive oil
Slice watermelon. Slice mozzarella into 1cm slices. On a serving dish, alternate slices of mozzarella and watermelon. Sprinkle with basil, sea salt and pepper. Drizzle with olive oil and balsamic glaze and serve. If you have any leftover watermelon use for dessert plate.
