RECIPE: Sticky Pork and Crispy Noodle Salad
Sticky Pork and Crispy Noodle Salad with lettuce cups
2 tbs peanut oil
1 large onion grated
500g Pork mince
2 garlic cloves
1 tbs grated ginger
¼ cup char siu sauce
1 tsp Chinese five spice powder
1/3 cup shaohsing Chinese rice wine
100g pkt Changs fried noodles
1 long red chilli chopped
100g toasted cashews roughly chopped
Coriander leaves and Mint leaves for garnish
Lettuce Cups -Iceberg or cos variety
Lime wedges/cheeks to serve
Heat oil in frypan or wok over medium to high heat cook onion until softened. Increase heat to high and add pork mince cooking until golden.
Add garlic, ginger, char siu sauce and five spice cook until fragrant. Add the rice wine and cook for 3-4 minutes until caramelised.
Divide noodles among plates. Top with pork mix, top with chilli, cashews and herbs. Serve with lettuce cups and lime wedges/cheeks.
