RECIPE: Quick and easy halloumi and zucchini fritters
THESE halloumi and zucchini fritters are super quick and easy to make, but also taste delicious.
Served with a green salad, they make the perfect light meal.
- 4 medium sized zucchini
- 200g halloumi
- 1 lemon
- 2 tbsp of basil
- 1 tbsp of coriander
- 1 tbsp of mint
- Or 4 tbsp of dill
- 3 eggs
- 1/4 tsp of Salt
- Freshly ground black pepper
- 1 tbsp of butter
Grate four zucchinis and place on a tea towel. Using the tea towel, wrap up grated zucchini and tightly squeeze out as much excess liquid as you can. Place in mixing bowl.
Grate halloumi and add to mixing bowl with zucchini. Grate lemon zest and add to mixing bowl.
Add chopped herbs, eggs, salt and pepper, and mix together well.
Heat pan and add butter. Add 3-4 tablespoon of mixture to frying pan and cook for 1-2 minutes on each side, or until golden.
Serve with a crisp green salad. Squeeze lemon over just before serving.
