RECIPE: Hopping mad about this delicious carrot cake
WINTER and carrot cake go together almost as well as autumn and carrot cake. But alas, it's winter and carrot cake is and any time (and every time) type of food. This is a simple and delicious carrot cake from Seniors News very own travel writer, Erle Levey. Enjoy!
3 tsp cinnamon
2 cups wholemeal self-raising flour
3 cups grated carrot
1.25 cups salad oil
2 cups brown sugar
2 tsp vanilla essence
½ cup chopped almonds/walnuts
Blend oil and sugar, add eggs then the dry ingredients
Cook in a medium oven 180-190 degrees
Check at one hour by using a skewer
Philly cheese, caster sugar and a touch of lemon juice if you're feeling fancy!
