Lady Flo’s famous pumpkin scones recipe

THEY'RE the most quintessentially Queensland fare, made famous by one of the state's most iconic women.

For Lady Flo, the humble pumpkin scone was a hearty way to connect to the people most important to her - Queenslanders.

The housewife/senator first became popular for her the recipe in the 1970s and later went on to auction off handwritten versions of it for charity.

In an interview in the 1990s, Lady Flo said she had never been ashamed of the good publicity the pumpkin scone had gifted her.

"They helped me relate to women who make scones and men who eat them and when you're in politics that's all the people, you know, who vote for you," she said. "When I think of my pumpkin scones I think the tremendous amounts of money that it's made for charities."

During a visit to Queensland, Prince Charles once asked Sir Joh if his continued reign as premier was due to the pumpkin scones his mother the Queen had told him about.

After retirement from the Senate in 1993, Flo opened Flo's Country Kitchen restaurant and wrote three country cookbooks.



1 tablespoon butter

1/2 cup sugar

1/4 teaspoon salt

1 egg

1 cup mashed pumpkin (cold)

2 cups self-raising flour


Beat together butter, sugar and salt with electric mixer till light and fluffy.

Add egg, then pumpkin and stir in the flour.

Turn dough onto a floured board and cut into circles.

Place on a tray on the top shelf of a very hot oven (225-250c) for 15-20 minutes.

Remove from oven, allow to cool and serve with butter.
